Separator systems for grease fall under DIN 4040-100. It provides for regular emptying and cleaning, as a rule monthly, plus annual servicing by a qualified person and a general inspection roughly every five years.

Separators for light liquids fall under DIN 1999-100. They are typically found in workshops, car washes, petrol stations and underground car parks. Regular emptying, annual servicing and a recurring general inspection are provided for there as well.

A separator system comes with a record of emptying, servicing and inspections. At an inspection that is usually the first thing asked for.
Keep those documents complete and to hand and note every emptying with the date. It costs little time and saves discussions.
